CAKE MIX PEANUT BUTTER BARS



INGREDIENTS
  • 1 cup of Peanut Butter
  • 1/2 cup water
  • 1 large egg
  • 15.25 ounces Yellow Cake Mix
  • For the frosting:
  • 1 stick margarine (1/2 c.), softened
  • 1/4 cup milk
  • 1-2 tsp vanilla (depending on your taste)
  • 3 tablespoons of cocoa
  • 2-3 cups of powdered sugar
INSTRUCTIONS
  1. Heat the oven to 350°F.
  2. Spray a 13 X 9-inch pan with no-stick cooking spray.
  3. In a medium bowl combine 1 cup of peanut butter, water and egg in large bowl, stirring until smooth. Stir in cake mix until blended well. Spread into prepared pan.
  4. BAKE 20 to 25 minutes or until puffed and light golden brown. Cool completely.
  5. Mix all ingredients with a hand mixer until smooth. Add more powdered sugar or milk until you reach desired consistency and spread on top of bars.

SPICY CHILLI CABBAGE STIR-FRY(SRI LANKAN).

Ingredients Half a head of Cabbage. 1-2 garlic pods 1 large Onion Sprig of Curry leaves Pinch of Turmeric powder 1/2 teaspoon of chilli flecks 2-3 tablespoons of Oil 1/2 a Lime. Instructions Slice the Cabbage, Onion, Garlic and set aside. Place pan over low fire(preferably a non-stick pan), sauté the Cabbage until they wilt and there is no moisture left in the pan. Once the moisture from the Cabbage has evaporated, maintain low fire and pour in the oil, add the sliced Onions, Curry leaves, Garlic with Turmeric powder and Salt to taste. Cook for at least five minutes until you see the Cabbage edges slightly burn, take the pan off the stove and with the remaining heat, add the chilli flecks and mix it into the Cabbage stir-fry. Taste and season with Salt if necessary, to further enhance the taste, drizzle a bit of lime juice and mix. Set aside. Whisk together sugar and cornstarch in a medium pan over medium heat. Slowly add milk egg mixture to pan, stirring constantly. Bring to a boil and cook for 1 minute, stirring constantly. Remove from heat. Combine remaining ingredients in a bowl and mix well. Gradually add pumpkin mixture to pan, whisking constantly until blended. Return pan to low heat and cook for 3-4 minutes until heated throughout, stirring constantly. Remove from heat, transfer to serving dishes and refrigerate to chill. Serve with a dollop of whipped cream or whipped topping.
